Definitions
Live weight: weight of the steer while he's still alive.
Net weight: live weight minus stomach contents
Hanging weight: weight of the sides of beef after slaughter before cut and wrap.
Table Cuts: finished product; all remaining beef after processing.
Slaughter: the act of killing and field dressing the steer into sides of beef.
Cut and Wrap: processing of the sides of beef into table cuts.
Marbling: fat that is imbedded in the muscle tissue
Finish: fat layer over the entire animal
Our Guarantee
We will guarantee our beef in excellent health at the time of slaughter. No money will be refunded after the beef is slaughtered but should the butcher find any defect or injury we will replace the beef with one of comparable size and highest quality.
